Some vitamin-mineral mixes have a very high impact on the baking result. One example is riboflavin. When used at high doses in bread it results in a yellow crust. We talk to our customers about this beforehand and discuss which dosage is suitable. Iron sulfate is another example. Depending on the granulation level, it may leave brown stains on the bread. In application experiments we, therefore, test the form in which the micronutrient must be contained in the premix in order to achieve optimum results in the end product and meet our customers’ requirements.
